Spicy Zucchini Pickles

If you have an abundance of zucchini or you want to add more fresh vegetables into your diet this is a great spicy ferment to make! Adding a starter culture will give you added benefits and a crispier ferment! And if you don’t like spicy food, you can always create these delicious zucchini pickles as well! This recipe came to us from Corinne in the Gut Health Guru’s Facebook Group!

 

Ingredients: 

 

-1 pound zucchini

- 4 garlic cloves

- 1 tsp mustard seeds

- 1 tsp black peppercorns

- 2 tablespoons salt

- 1 tbsp dill seeds

- 1 tsp coriander seeds

- 2 tsp chilli flakes

- ¼ tsp Caldwell starter culture

 

Method:


  1. Pack all of the vegetables in quality jars and top with water until covered (leave 1 or 2 inches headspace)
  2. Ferment for 2 days and then put it in the fridge. Enjoy after 3-4 weeks, tasting daily or weekly!
