Raw cacao is an anti-oxidant rich food produced by cold-pressing and fermenting raw cocoa beans. Cold pressing keeps the living enzymes in the cocoa and takes out the fat (cacao butter).
Cocoa looks very similar but it’s certainly not the same. Cocoa powder has been been produced by roasting at much higher temperatures. The process of roasting changes the chemical composition of the cocoa bean, reducing the enzyme and anti-oxidant activity and lowering the overall health giving benefits.
