If you are looking for a healthier Valentine's day treat, these Chocolate Kefir Candies are a great addition to your day! They are created with Milk Kefir so they are full of probiotics and also, with the Plant Derived Minerals, make sure that your body is working at its optimal level! This recipe came to us from Tracey in the Gut Health Guru’s Facebook Group.
Ingredients:
- 24 mini cupcake liners
- 2 cups Nestle Plaistowe Dark Cooking Chocolate
- 1 oz or 30ml Plant Derived Minerals (optional)
- ½ cup shredded coconut or ½ cup slivered almonds or macadamia nuts
- ½ cup pine nuts or ½ cup cherries
- 1 cup Kefir Cheese
- Zest of one orange
- 2 tablespoons Honey
Method:

Place the mini cupcake liners in mini muffin pans.

Melt 1 cup of the chocolate in a double boiler, stirring constantly. Remove the chocolate from the heat and add ¼ cup of coconut and ¼ cup of pine nuts. And ½ ounce or 15mls of the optional Plant Derived Minerals. Mix all ingredients to combine.

Drop 1 tablespoon of the mixture into each muffin cup, and then place these in the freezer.
Topping:

Mix the kefir cheese, orange zest, and honey in a small bowl.

When chocolate is frozen, remove the muffin tin from the freezer and spread ½ tablespoon of the kefir cheese mixture on top of the chocolate.

Put the muffin tin back in the fridge so the kefir can set.

Melt the remaining 1 cup of chocolate in a double boiler stirring constantly. Remove the chocolate from the heat and add the remaining ¼ cup of coconut or slivered almonds and ¼ cup of pine nuts, the rest of the Plant Derived Minerals and mix to combine. Let the chocolate cool until it’s warm but not hot, about 5 to 10 minutes.

Remove the muffin tin from the refrigerator and spread the chocolate on top of the Kefir Cheese.
- Place the candies in the refrigerator until solid, about 1 hour.
