Ingredients:

- 24 mini cupcake liners

- 2 cups Nestle Plaistowe Dark Cooking Chocolate

- 1 oz or 30ml Plant Derived Minerals (optional)

- ½ cup shredded coconut or ½ cup slivered almonds or macadamia nuts

- ½ cup pine nuts or ½ cup cherries

- 1 cup Kefir Cheese

- Zest of one orange

- 2 tablespoons Honey

Method:

  1. Place the mini cupcake liners in mini muffin pans.

  2. Melt 1 cup of the chocolate in a double boiler, stirring constantly. Remove the chocolate from the heat and add ¼ cup of coconut and ¼ cup of pine nuts. And ½ ounce or 15mls of the optional Plant Derived Minerals. Mix all ingredients to combine.

  3. Drop 1 tablespoon of the mixture into each muffin cup, and then place these in the freezer.

Topping:

  1. Mix the kefir cheese, orange zest, and honey in a small bowl.

  2. When chocolate is frozen, remove the muffin tin from the freezer and spread ½ tablespoon of the kefir cheese mixture on top of the chocolate.

  3. Put the muffin tin back in the fridge so the kefir can set.

  4. Melt the remaining 1 cup of chocolate in a double boiler stirring constantly. Remove the chocolate from the heat and add the remaining ¼ cup of coconut or slivered almonds and ¼ cup of pine nuts, the rest of the Plant Derived Minerals and mix to combine. Let the chocolate cool until it’s warm but not hot, about 5 to 10 minutes.

  5. Remove the muffin tin from the refrigerator and spread the chocolate on top of the Kefir Cheese.

  6. Place the candies in the refrigerator until solid, about 1 hour.
