2) 混合物を第2発酵ボトルに注ぎ、3～5cmの空きスペースを残してしっかりと蓋をします。

3) その時の天候に応じて、室温で 2 ～ 7 日間放置します。つまり、温度が高いほど、2 回目の発酵が早くなります (放置時間が長いほど、残る糖分は少なくなりますが、醸造酒は酸味が増し、アルコール度数も高くなる可能性があります)。好みの味を確かめるために、醸造酒を毎日味見することをお勧めします。この時点で発酵を終了できます。味見は、ボトルを開けて余分な圧力を解放することを思い出させる良い方法です。

4) 抽出液を冷蔵庫に移して冷やします。

ミルクケフィアを二次発酵させる方法は？
