This premium-quality culture is ideal for fermenting cream into crème fraîche and crafting authentic, small-batch cultured butter with complex buttery aromas and smooth texture.

Culture Profile:

  • Contains: Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris, Lactococcus lactis subsp. lactis biovar diacetylactis, and Leuconostoc mesenteroides

  • Thermosensitive: Store below –18 °C for maximum shelf life

  • Mesophilic: Best fermentation temperature: 20–25 °C

How to Use:

  1. Warm 1–8 litres of organic heavy cream (35–40% fat) to 21–22 °C.

  2. Sprinkle 1g of starter culture per litre of cream.

  3. Stir, cover (not airtight), and ferment at room temp for 12–24 hours.

  4. Chill, then churn to make cultured butter.

  5. Wash butter in cold water, salt to taste, and store chilled.

One sachet makes up to 10 litres of cultured cream. The cultured cream can be reserved and used a starter for the next batch.

Keep frozen at –18 °C or lower. Once opened, reseal tightly and use within 6 months.

IMPORTANT: We only ship our yoghurt cultures on a Monday, Tuesday and Wednesday (as item is stored refrigerated) so that they do not remain in transit via Australia Post over the weekend
