While you can find buttermilk at the grocery store, making your own fermented buttermilk at home with a starter culture offers a rewarding experience and allows for greater control over the final product. 

Ingredients:

  • 2 litre of milk (skim, 1%, 2%, or whole)
  • 1g of Pure Buttermilk Starter Culture

Instructions:

  1. Slowly heat the milk in a saucepan to 30°C using a thermometer.
  2. Sprinkle the starter culture over the milk and let it hydrate for 5 minutes.
  3. Stir well (about 21-27 strokes).
  4. Transfer to 2 glass quart mason jars, close it, and let it ferment for 12 hours or until the milk has thickened to the consistency of buttermilk.
  5. Use immediately or refrigerate.
  6. Reserve 4 tablespoons to be used as a starter for your next batch
