Apa itu Koji Starter?

Koji starter atau biji koji adalah spora Aspergillus yang digunakan untuk membuat koji.

Makanan fermentasi seperti miso, amazake (sake manis), sake dan kecap dibuat menggunakan koji.

Pemula koji ini dibuat oleh produsen yang sudah berdiri selama 300 tahun, "Hishiroku."

Merupakan starter koji yang paling cocok untuk membuat koji di rumah.

Varietas Chouhaku-kin digunakan, dan ciri utamanya adalah memiliki hifa panjang dan tingkat reaksi pencoklatan yang rendah.
