Ingredients:
100g Starter (the starter was made with ½ cup of buckwheat, 1 cup of milk, 1/2 cup of yogurt, left for 5 or 6 days and give it a stir everyday. Thicken it up with a cup of buckwheat flour and it is good to go!)
30g Psyllium
560g Water
8g Salt
50g Sunflower
55g Pepitas
55g Linseed
245g Buckwheat Flour
200g Tapioca starch
Method:
Mix all of the ingredients into a bowl.
It will be sticky but put some buckwheat flour down and then shape into a cob loaf.
Put it on a piece of non-stick bake paper, cover with a tea towel & leave for about 12 hours. Make this up at night and shape it into round shape then cook in the morning at 210 degrees, fan forced, for 1 hour.
