If you love citrus, then you are going to enjoy this beautiful orange almond cardamon cake! It’s full of orange, gluten free, and can be modified to be a lower sugar cake as well! Just omit the glaze and use a sugar substitute. The cardamon is full of fibre and manganese to add some wonderful benefits too. This recipe came to us from Lydia in the Gut Health Guru’s Facebook Group!
Ingredients:
- 3 large navel oranges
- 3 cups of almond meal
- 3/4 cup of sugar alternative (like monk fruit or you can use a healthier sugar swap like coconut sugar or raw cane sugar)
- 6 large eggs
- 1 tbsp baking powder
- 2 tsp cardamon
- 2 tsp orange oil
- 1 1/2 cup glucose syrup
- 3 large navel oranges
Method:
- Boil the whole oranges until soft (around 1.5 hours)
- Cool and reserve 1 whole orange (use in step 8)
- Cut 2 oranges into quarters and place them in the food processor until smooth
- Add eggs 1 at a time, add sweetener, baking powder, almond meal, orange oil, and cardamon.
- Pour into a prepared 10" springform pan and bake at 180C approx 1 hour (be careful not to burn!)
- While the cake is cooking, slice the reserved orange. Boil the glucose for a couple of minutes then add the orange slices
- Cook for 1 minute and then remove to a tray to let it dry out a bit.
- When the cake is cooled, remove it from the tin and top with orange slices and dust with powdered natvia!
